I recently had the pleasure of having three gorgeous, highly accomplished, professional, stylish, intelligent, hilarious, wise, strong, and sharp women over for brunch. We got together and drank, ate, shared stories, laughed heartily, and encouraged one another. It was one for the memory banks, and a good time was had by all. If I’m hosting a brunch, I recognize that it’s NYC, and for the most part, that means there will be booze. That meant I had to bring it on the cocktail tip. And the Strawberry Lemonade Cocktail I dreamt up BROUGHT IT. You’ll enjoy this too at your next boozy brunch. Oh, and please excuse the fact that the glass is half-empty in the photographs. It was actually my real glass that I was drinking from while I finished cooking. Needless to say, by the time the meal came, everybody was warm, fuzzy, and ready to eat.
Bag of frozen strawberries
Two fresh lemons
Honest Ade Lemonade (or your favorite bottled lemonade)
Crane Lake Chardonnay (or your favorite Chardonnay)
Blush Rose Lambrusco
Put Lambrusco in the fridge to chill overnight. Mix frozen berries, lemonade, and chardonnay in a pitcher. Let flavors combine in the fridge for at least two hours, or up to overnight. Half one lemon and squeeze juice into pitcher (careful of the seeds). Slice remaining lemon, saving enough slices for garnishing glasses. Put any additional leftover slices of lemon in the pitcher. When guests arrive, pour half the lemonade mixture from the pitcher into wine glasses; include strawberries in each glass as well if you prefer. Fill the other half with lambrusco. Sip and enjoy!
